GLUTEN-FREE PALEO PANCAKES
INGREDIENTS:
DRY
- 1/2 C almond flour 
- 1/3 c tapioca flour 
- 1/4 c coconut flour 
- 1/2 tsp baking soda 
- 1/4 tsp salt 
WET
- 4 large eggs 
- 1/4 cup almond milk 
- 1 tbsp honey 
- 1 tsp white wine vinegar 
- 1 tsp vanilla extract 
- coconut oil

- Carbohydrates 20.3g 
- Protein 10.3g 
- Fat 13.5g 
- Sugar 6.2 
Serving 2 pancackes
Instructions:
- Whisk all dry ingredients together 
- In a separate bowl, whisk all wet ingredients. Then add wet to dry ingredients. 
- Heat skillet on medium-high and coat with coconut oil 
- Spoon batter onto skillet making pancakes 3-4 inches in diameter 
- Cook 2-3 minutes on one side then flip 
- Serve immediately with fruit or other toppings
